Pauline from Southern France, and Paul, Eben Sadie’s assistant winemaker, joined up to create the Paulus Wine Co in 2018. Paul & Pauline believe wine is more than just what's in the bottle—it's about stories, connections, and shared experiences. “We deeply believe that the people, relationships, and shared values between growers and winemakers make a wine's story. It's about sharing, learning, experiencing, and living.” They only make two wines, both Chenin Blanc and here are their Tasting Notes…
BARTÀS CHENIN BLANC 2023: Chenin Blanc bush vines, planted in 1978, on shallow and warm granite soils in the Helderberg, the most southern part of the Stellenbosch region. Hand picked and whole bunch pressed into old oak barrels, spontaneously fermented and matured in 500 litre barrels for 12 months, before racked and bottled.
On the nose, we pick up a couple of different notes of citrus, fresh fruits, green pineapple and cantaloupe. The palate is flinty, precise and on point. Pure fruit plays off against a snappy, racy acidity before a finish that is long and pithy, wonderfully refined with a crystalline structure.
BOSBERAAD CHENIN BLANC 2023: Swartland Chenin Blanc bush vines from the Paardeberg planted in 1980 in deep decomposed granite soils. Hand picked and whole bunch pressed into old oak barrels (and an egg) where the juice ferments and settle naturally. The wine is kept on the lees for about twelve months and then racked and bottled. No fining, no filtration, just a kiss of sulphur.
On the nose, we pick up a variety of stone fruits like pear and apricot accompanied by some hints of cantaloup, baked quince and honeycomb. On the palate, there is a certain richness and power that comes through, a slight hint of reduction and saltiness that emphasized and elevates freshness to the wine.
There should always be an empty parking space in the corner next to our shop, but if not please feel free to stop directly in front of our shop while you are with us - this will save you time driving around looking for a parking space.

We visit wine farms and attend tastings to find, taste, and then stock wine from the smaller Estates and independent winemakers who buy grapes and produce outstanding wine under their own labels – much the same as the French negociants have been doing for centuries. Given that these winemakers make wine in such small quantities, sometimes just a single barrel, their wine will never be found on the shelves of the major retailers, but only in independent specialist shops like Wine & Company on High Street, Hermanus.
In addition to the great selection of well-known local wines and MCC's, we also stock craft gin and beer, imported wines, French Champagne, Belgian Ales as well as whisky and other spirits. Wine & Company (established in 1998 by Bartho Eksteen) has a well-earned reputation for stocking hard-to-find small-batch wines and we strive to continue this great tradition. If you purchase a bottle of wine from us and it is faulty we will gladly replace the bottle and return the faulty wine to the winemaker.
