Recipe: Durban Mutton Curry
If there’s anyone in South Africa that knows how to make a decent curry, it has to be a Durbanite.
These super-simple yoghurt popsicles are made with only a few ingredients and are perfect for a summertime treat. Plus, they’re totally customisable to make whatever fruit-flavoured popsicle you want! So, grab the kids and get into the kitchen for this easy-to-achieve project that results in a healthy sweet treat.
• ½ - 1 cup Fresh Cream
• 2 cups Flavoured Yoghurt
• 1/3 cup Honey (or to taste)
• 3 cups Fruit (of your choice)
• Granadilla pulp*
*Use the pulp instead of berries for a granadilla-flavoured popsicle.
Pro tip: If you don’t have popsicle moulds - you can use plastic yoghurt containers or 100 ml plastic cups as moulds.
1. Whip the cream with a whisk, just before soft peaks start to form - you should be able to see lines in the cream as you whisk it, but it should not reach soft peak stage.
2. Fold in the yogurt and honey, followed by your desired fruit.
3. Make sure your popsicle moulds are dry or you’ll get ice crystals on your popsicles.
4. Pour the mixture into popsicle moulds, making sure there are no air pockets. You can tap the popsicles against the counter to pop any air bubbles.
5. Add popsicle sticks to the centre of each one and transfer to the freezer.
6. Freeze for at least 4 hours before enjoying.
