Recipe: Durban Mutton Curry
If there’s anyone in South Africa that knows how to make a decent curry, it has to be a Durbanite.
Ingredients:
Method:
1. Paint you roast with Olive Oil
2. Season and rub your meat with Aromat, Dried Parsley, Dried Dill, Beef Spices, Coarse Salt, Chili Flakes
3. Wrap the seasoned and rubbed meat in a plastic bag and let it rest in the fridge for 2 hours.
4. Rub and massage the meat often during the resting period, whilst sealed in the plastic bag. This helps to make all the flavours penetrate the roast.
5. Melt some olive oil and butter in a large frying pan on the stovetop.
6. Remove the roast from the plastic bag and fry in the pan until brown all sides.
7. Now place the meat in a Roasting Pan and pour the butter and oil from the pan over the meat.
8. Cover with tin foil and bake at 180 degrees Celsius for 1 to 2 hours, depending on size and taste.
9. Remove foil from meat for the last 10 minutes in the oven to crisp the outer layer.
