Recipe: Greek-Style Chicken Kebabs

Recipe: Greek-Style Chicken Kebabs

Enjoy a Greek-style evening with your family with this quick and delicious chicken kebab recipe.

 
INGREDIENTS

For the Chicken Kebabs:

  • 4 Skinless and deboned chicken thighs
  • 1 Red onion, cut into thick chunks
  • 1 tbsp. Dried oregano
  • 2 Garlic cloves, crushed
  • Juice and zest of 1 lemon
  • A glug of olive oil
  • 1 Cup of plain Greek yoghurt
  • Salt and pepper to taste
  • 6 - 8 Bamboo kebab sticks, pre-soaked in water

For the Tzatziki:

  • 1 Cucumber, peeled, seeded and grated
  • 2 Cups of full cream Greek yoghurt
  • The juice of half a lemon
  • Coarse sea salt
  • 1 Garlic clove, minced
  • A couple of sprigs of fresh mint, finely chopped
  • Salt and pepper to taste

For the Chicken Kebabs

1. Cut the chicken into cubes (each cube roughly the size of a matchbox)

2. Combine all the ingredients (except for the onion), add the chicken cubes, cover and place in the fridge to marinate for at least an hour.

3. Submerge the kebab sticks in water and leave to soak. This will prevent the kebab sticks from burning when you cook the chicken.

4. After about an hour, remove the chicken from the fridge.

5. Skewer the chicken cubes and chunks of red onion onto the kebab sticks, alternating the onion and chicken as you go.

6. Keep skewering until you’ve used up all the chicken, and reserve the marinade.

7. Heat a griddle pan, and cook the chicken, basting with the leftover marinade as you go.

8. The chicken should be cooked through after about 10 - 15 minutes.

For the Tzatziki

1. While the chicken is marinating in the fridge, make the tzatziki.

2. Grate the cucumber and put it in a colander.

3. Sprinkle over about a tablespoon of coarse salt, and set aside for about 30 minutes to allow the salt to draw out the moisture in the cucumber.

4. After 30 minutes, rinse the cucumber under cold water, then drain on kitchen paper.

5. In a large bowl combine the cucumber with the yoghurt, lemon juice, garlic and fresh mint.

6. Have a taste and season to your liking.

To Serve

Serve the kebabs on a platter, with the bowl of tzatziki and warmed pita breads on the side.
