4 Simple Pre-Festive Budgeting Tips
With summer, the festive season and school holidays around the corner, now is the perfect time to get serious about saving some extra cash.
Hearty and delicious! This easy and affordable chicken soup will warm anyone up in winter - plus it’s a great pick-me-up for when you’re feeling a bit under the weather.
1. Put a whole chicken into a large pot.
2. Add all the veg to the pot.
3. Add enough water to cover the chicken and vegetables.
4. Bring everything to the boil, over a medium to high heat.
5. Reduce the heat and gently simmer the chicken and vegetables until cooked through and the meat falls off the bones.
6. While the soup is simmering, use a ladle to skim off the fat on top of the soup every now and then.
7. Transfer the chicken and veg from the pot to a large bowl.
8. Next. take a different bowl and strain the broth through a fine sieve into the bowl.
9. Pour the broth into a clean pot.
10. Take the chicken and pull the meat from the bones, shredding any large pieces.
11. Add the shredded chicken to the pot of broth. Chop the salary, carrots and onion then add the chopped veg to the soup.
12. Stir to combine, then season to taste. Serve!
