Red Wine Oxtail
Celebrate the season with this tender, slow-cooked lamb, infused with garlic and oregano.
Make this fast, cheap and easy Bacon, Spring Onion and Potato pie for a tasty family meal, or cut in small squares and serve as a finger snack at parties and events.
1. Preheat oven to 180°C.
2. Grease a 30 x 20-cm glass baking dish, or spray well with a non-stick cooking spray.
3. Fry the bacon in a large frying pan over medium heat until bacon is crisp. Stir frequently. This takes about 8 minutes.
4. Transfer the bacon to a paper towel using a slotted spoon. Drain well.
5. Combine the beaten eggs with the chopped spring onions, grated potatoes, grated cheese and pepper. Gently mix in the fried bacon.
6. Pour mix into prepared baking dish, spreading it evenly. Bake for about 45 minutes, until the centre is set.
- Cut into squares, serve and enjoy!
