Red Wine Oxtail

INGREDIENTS
METHOD
1. Add oil to a wide bottom saucepan.
2. Sauté chopped onion, green chili and ginger garlic paste.
3. Add cayenne, paprika, curry powder and stir-fry until fragrant.
4. Add tomatoes and cover with lid.
5. Cook for 5 minutes until tomatoes are softened.
6. Add salt.
7. Add the 4 lamb shanks. Stir well so that the sauce coats the shanks.
8. Cover and cook on medium heat for approximately 2 hours. Add extra water as needed.
9. After 2 hours, remove lid and add in 1 can of OK Housebrand Butter Beans, drained.
10. Leave to cook for a further 30 minutes until the meat is falling off the bone.
11. Remove from stove, garnish with chopped coriander and serve.
