Mama’s Chicken Feast
This festive roast chicken brings warmth to your holiday table.
Nothing warms you up quite as nicely as a steaming bowl of delicious pumpkin soup when there’s a chill in the air. This hearty recipe is really simple to make and promises warm smiling faces all around the dinner table.
Soup:
• 500g Pumpkin, butternut squash or small pumpkin
• 4 Large potatoes
• 3 Cloves garlic
• 2 Onions
• 2 Tablespoons olive oil
• 2 Tablespoons thyme
• 1 Green chilli
• 2 Cans of coconut milk
• 300ml Water
• 2 Tablespoons lemon juice
• Salt and black pepper
Salsa / Topping:
• 1 Tablespoons coriander
• 1 Tablespoons olive oil
• 1 Red chilli
• 1-2 Tablespoons toasted sesame seeds
1. Peel and cut the vegetables roughly.
2. Fry them lightly in olive oil with the thyme and chopped green chilli.
3. Add the coconut milk and water, then simmer 30-45 minutes.
4. Blend the soup and add lemon juice, salt and pepper to taste.
5. Sprinkle finely chopped coriander, sliced red chilli and the toasted sesame seeds.
