Recipe: Durban Mutton Curry
If there’s anyone in South Africa that knows how to make a decent curry, it has to be a Durbanite.
• 1 cup OK flour
• 1 cup OK sugar
• 6 tbsp cocoa powder
• 1 tsp baking soda
• ½ tsp OK salt
• 1 large OK egg
• ½ cup butter (melted)
• ½ cup hot water
• ½ cup (120ml) vegetable oil
• ¾ tsp vanilla

First mix your dry ingredients, then add your wet ingredients and mix until smooth! Use paper cups in your muffin tray and pop in the oven at 180 °C for 18 minutes or until a toothpick comes out clean.
For frosting, beat the butter smooth then add the rest slowly.
