Recipe: Durban Mutton Curry
If there’s anyone in South Africa that knows how to make a decent curry, it has to be a Durbanite.
Originally created at New York’s Waldorf-Astoria Hotel in 1896 by the maître d’hôtel, Oscar Tschirky, the Waldorf salad containing only apples, celery and mayonnaise was an instant success. Celebrate spring with the fresh and easy recipe of our delicious Waldorf salad.
• 1/2 cup mayonnaise
• 2 1/2 tablespoons white vinegar
• 1 apple, peeled, cored, and sliced
• 1 large stalk celery, diced
• 1/2 cup raisins
• 1/2 cup chopped walnuts
• salt and pepper to taste
• a few lettuce leaves
• In a mixing bowl, whisk together the mayonnaise and vinegar.
• Add the apples, celery, raisins and walnuts.
• Add salt and pepper to taste.
• Mix together well and serve chilled on top of a bed of lettuce.
