Recipe: Durban Mutton Curry
If there’s anyone in South Africa that knows how to make a decent curry, it has to be a Durbanite.
A classic chocolate mud cake served in a mug, and oh-so-easy to make in the microwave.
• 3 Tbsp. all-purpose flour
• 3 Tbsp. OK housebrand sugar
• 2 Tbsp. cocoa powder
• ¼ Tsp. baking powder
• Pinch of housebrand salt, optional
• 3 Tbsp. milk
• 3 Tbsp. OK housebrand oil
• Splash of vanilla essence, optional
• 3 Tbsp. chocolate chips
Directions:
• Take 350ml microwave-safe ceramic mug.
• Add the flour, sugar, cocoa powder, baking powder and salt. Blend thoroughly with a fork. Add the milk, vegetable oil and vanilla and blend again until smooth. Stir in the chocolate chips.
• Microwave on high for 90 seconds. Do not overcook or the cake will be dry. Let cool 2 – 3 minutes before eating. Add a marshmallow or two to your liking. Enjoy!
