The JAN wines are made for him by the team at Zevenwacht Wine Estate in Stellenbosch. Together they have crafted a pair of exceptional wines that Jan is proud to present at his restaurants. We are happy to have them on our shelves too, and here are winemaker Hagen’s Tasting Notes for them!
JAN White (52% Chenin, 28% Chardonnay, 13% Viognier, 7% Roussanne).
Vineyard Management: The vineyards for this wine all come from our Zevenwacht property on the Polkadraai Hills ward of Stellenbosch. The soils are decomposed granite with varying amount of structure and clay in the subsoils and the slopes are South to South West facing with altitudes between 200-350m.
Vinification: The grapes were harvested at 22 – 23,5 ºBrix depending on varietal and site. After whole bunch pressing, the juice was settled and racked to 500l French Oak barrels for fermentation. The wine spent 8 months barrel ageing (5% 1st Fill, 95% Seasoned French oak) on the lees for a richer mouth feel and underwent partial malolactic fermentation.
Tasting Note: Complex and elegant, the wine shows mandarin, white nectarine, apricot and floral spice on the nose with subtle oak spice undertones. The palate is focused with a bright acidity and a long savoury finish.
Ageing: The wine has the potential to age for 2-4 years and will gain more complexity and richness over time.
JAN Red (78% Shiraz, 19% Grenache, 3% Mourvedre).
Vineyard Management: These vineyards are all situated on South westerly and westerly facing slopes ranging in altitude from 100m - 200m above sea level. All the vines are trellised on a seven-wire hedge system that allows for perfect containment of the sometimes-vigorous growth habits of the Shiraz and Grenache varieties. Pruned to two-bud spurs, allowing for 16 - 18 bearers per running metre.
Vinification: All cultivars were fermented separately in open red wine fermenters. The fermentation temperatures hovered around 26 °C peaking at ±28 °C. Regular pump overs helped with extracting intense colour and soft, pliable tannins. After fermentation, the wine was pressed and racked to 500L French oak barrels with 15% new oak. The different components were aged for 12 months before blending.
Tasting Note: Dark and brooding on the nose with plum, black berry and sage. The wine opens to show cranberry and pepper spice with juicy red fruit on the palate, underpinned by subtle hints of oak.
Ageing: A delicious wine to be enjoyed now or over the next five years.

We visit wine farms and attend tastings to find, taste, and then stock wine from the smaller Estates and independent winemakers who buy grapes and produce outstanding wine under their own labels – much the same as the French negociants have been doing for centuries. Given that these winemakers make wine in such small quantities, sometimes just a single barrel, their wine will never be found on the shelves of the major retailers, but only in independent specialist shops like Wine & Company on High Street, Hermanus.
In addition to the great selection of well-known local wines and MCC's, we also stock craft gin and beer, imported wines, French Champagne, Belgian Ales as well as whisky and other spirits. Wine & Company (established in 1998 by Bartho Eksteen) has a well-earned reputation for stocking hard-to-find small-batch wines and we strive to continue this great tradition. If you purchase a bottle of wine from us and it is faulty we will gladly replace the bottle and return the faulty wine to the winemaker.
