There is an art to making wine. For an Italian, there's also an art to choosing the wines for your wine list.
Without a doubt, it takes a great deal of skill to create a good wine. From knowing what to plant, where to it plant it, and how to prepare the ground to knowing exactly when to plant and harvest... and remember, Fabio's is located in the heart of the busiest wine-growing region in SA, producing some of the best wines in the world.
Similarly, it takes a lot of skill to create great dining. From simply learning how to choose the best ingredients, finding reliable suppliers, preparing those ingredients correctly then combining them into the foundations of perfect dishes. Then there's the art of presentation. It takes years of training to become a chef who can produce your favourite dishes artfully and deliciously.
So when it comes to selecting the wines that will go on our wine list, this is a job we take seriously. You could say that we are spoilt for choice. We do have some of the best award-winning wines right on our doorstep. We can also import fine wines from around the world... there are thousands to choose from, so you may wonder exactly how we whittle this down to a meaningful wine list!
We start with our menu which we designed to describe the Italian dining experience. From there, the decades of experience gathered from a family restauranteurs guide the wine choices that perfectly complement the range of dishes on the menu.
Strangely, it doesn't have to be a huge range of varietals and type... but then the art is in the knowing!
