Recipe: Chicken à la King

Chicken à la King is a quick and creamy dish made with tender chicken, mushrooms, bell peppers, and peas. The name might sound fancy, but it is one of the easiest dinners to make. This is the ultimate comfort food meal that’s ready in 30 minutes from start to finish - just perfect for a busy weeknight!

 
Ingredients

• 4 cups Cooked Chicken (cut into cubes)
• ½ cup Unsalted Butter (divided)
• 1 Small Onion (diced)
• 4 Cloves Garlic (minced)
• 1 Red Bell Pepper (diced)
• 220g Mushrooms (sliced)
• ½ cup All-purpose Flour
• ½ tsp Salt (plus more to taste)
• ¼ tsp Pepper (plus more to taste)
• 1 cup Whole Milk (or cream)
• 2 ½ cups Chicken Broth (more if needed)
• 1 cup Frozen Green Peas
• 1 cup Jarred Pimentos (diced) (you can also use normal peppers)

 
Method

1. Place a large skillet over medium-high heat. 
2. Add ¼ cup of butter and melt.
3. Add onion, garlic, mushrooms, and bell peppers, and sauté while stirring occasionally, until just tender, for about 4-5 minutes. 
4. Transfer the mixture to a plate and set aside.
5. Reduce heat to medium-low. Add the remaining 1/4 cup of butter and melt.
6. Whisk in flour, salt, and pepper. Stir constantly, until smooth, for about 1 minute.
7. Little by little, whisk in milk and, after that, chicken broth. 
8. Bring to a low simmer, stir, and cook for 4-5 minutes. If needed, stir in more chicken broth.
9. Stir in the cooked veggies and chicken, also add the frozen peas and diced pimentos. 
10. Stir well so that everything is coated in the sauce and cook until chicken is warmed through. Taste and adjust for salt and pepper.
11. Serve over rice.

Pro-tip:

This recipe calls for pre-cooked chicken. If you have leftover chicken or rotisserie chicken on hand - it’s perfect for this dish.
