INGREDIENTS
Savoury Rice
- 2 Cups rice, cooked
- 1T Oil
- 1T Butter
- 1 Onion, chopped
- 1/2 Green pepper, diced
- 1 Cup mixed vegetables, defrosted
- 1T Spice for rice
Saucy Chicken
- 4 Chicken breasts
- 1T Oil
- 1T Butter
- 4T OK mayonnaise
- 4T Peri-peri sauce
- 1T Salt
- 1T Chilli powder
- 1T Garlic
METHOD
Savoury Rice
In a medium sized pot, on a medium to hot plate, melt the butter and add the oil. Sauté the chopped onion and green pepper in the oil and butter, until cooked. Add the mixed vegetables and fry together until cooked.
Add the cooked rice and rice spices; fry all together for approximately 1 minute and set aside, but keep warm.
Saucy Chicken
In a medium sized pan, on a medium to hot plate, melt the butter and add the oil. Fry the whole chicken fillets until brown and cooked through. Mix the OK mayonnaise, peri-peri sauce, salt, chilli powder and garlic together and add to the chicken. Cook and stir with chicken until hot.
Slice chicken fillets to bite size and serve hot on savoury rice.
