Recipe: Sticky BBQ Ribs
Serve these as a snack during the next rugby or soccer match, or have it as the ultimate guy-food dinner.
INGREDIENTS
- 2 kg pork belly ribs
- 1 onion, finely chopped
- 3 garlic cloves, crushed and finely chopped
- salt and black pepper, to taste
- 1 cup of tomato sauce
- 5 tbsp. soya sauce
- a splash of apple cider vinegar
- 2 tbsp. brown sugar
- 3 tbsp. Worcestershire sauce
- 1 red chilli, finely chopped (if you like spicy food, add more chillies)
- a glug of canola oil
METHOD
- Heat a saucepan, then add the oil, garlic and onion.
- Sauté until soft and fragrant.
- Stir through the chilli and brown sugar, and continuously stir until the sugar has melted.
- Add the tomato sauce, soya sauce, apple cider vinegar and Worcestershire sauce.
- Season to taste and simmer gently for 10 minutes.
- Put the ribs in a glass dish and pour over the marinade, ensuring the meat is completely covered.
- Pop the ribs into the fridge and leave to marinate for two to three hours.
- Preheat the oven to 180°C.
- Place the ribs on an oven tray, reserving some of the marinade.
- Bake for about 15 - 20 minutes, turning and basting the ribs every now and then.
- Turn on the oven grill and then grill the ribs for about 5 minutes, turning them once and basting them one last time just before serving.
