Recipe: Carrot Cake Sandwiches
While carrot cake is scrumptious just by itself, you can always take your cake to the next level by making sandwiches! To turn this loaf into spectacular sandwiches, simply slice and add butter, jam and cheese.
Serves: 4 (8 Slices)

INGREDIENTS
- 2 cups flour
- 1/3 cup brown or treacle sugar
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
- 1/2 cup coconut milk
- 1/4 cup sunflower/canola oil
- 3 medium carrots (grated)
METHOD
1. Preheat oven to 180 degrees.
2. Mix dry ingredients together in a large mixing bowl.
3. Add milk, oil and combine well.
4. Fold the carrots into mixture.
5. Pour into a greased loaf or cake tin.
6. Bake for 50 to 55 minutes.
7. Leave to cool for 10 minutes before slicing.
VARIATIONS
Replace the jam with honey or replace the butter with peanut butter and drop the cheese.
