Recipe: Pap and Wors with Spicy Tomato Relish
This dish is as South African as you can get! A favourite staple for many people that won’t break the bank!
Ingredients
• 2 cups maize meal
• 4 cups of water
• 2 tins chopped tomatoes
• 1 onion, finely chopped
• 1 garlic clove, crushed
• 2 tbsp. brown sugar
• 2 chillies, seeded and chopped
• 2 tbsp. Worcestershire sauce
• salt and pepper, to taste
• 1 - 2 packets of OK Choice boerewors
Method
1. Pour the water into a pot, add a pinch of salt and once it’s boiling, add the 2 cups of pap.
2. Combine by stirring vigorously with a wooden spoon.
3. Reduce the heat and keep stirring for about 5 minutes.
4. Put the lid on, and gently simmer the pap for 30 minutes, or until cooked through.
5. While the pap is cooking, make the relish.
6. Heat a saucepan, add the olive oil and sauté the onion and garlic until soft.
7. Add the chopped chilli, tomato, Worcestershire sauce, brown sugar and seasoning. Stir and leave to gently simmer until the sauce has thickened and the flavours have developed – about 25 minutes.
8. Grill or pan-fry the boerewors until it’s done to your liking – maximum 10 minutes a side.
9. Serve the boerewors with a side of pap and spoonfuls of spicy relish.
OK FOOD TIP:
Whatever you do, never use a fork to turn the boerewors while it’s cooking! You’ll pierce the skin and the wors will end up dry because you’ll lose all those lovely fat and juices!
