Recipe: Koeksisters
INGREDIENTS
For the Dough:
- 2 cups of cake flour
- 4 tsp. baking powder
- ½ tsp. salt
- 4 tbsp. butter
- ½ cup buttermilk
- oil (for frying)
For the Syrup:
- 3 cups of sugar
- 2 large thumbs of ginger, bruised
- 1 cinnamon stick
- 2 cups of water
- 1 lemon, juiced
METHOD
For the Dough
1. In a large bowl, combine the flour, baking powder and salt.
2. Using your hands, rub the butter into the flour, until crumbly.
3. Add the buttermilk, bits at a time.
4. Mix everything together to form a dough.
5. If the dough seems too sticky, keep kneading it until smooth.
6. Cover the bowl with a damp tea towel and leave the dough to rest (at room temperature) for about 2 – 3 hours.
7. Sprinkle some flour onto a clean surface and place the ball of dough on top.
8. Using a rolling pin, roll out the dough to a thickness of about 5mm.
9. Take a sharp knife and cut the dough into strips (approximately 6cm long and 2 cm wide).
10. Now, take each strip, and cut it into three more strips from top to bottom, keeping the top intact.
11. Plat each strip, and pinch the ends together.
12. Bring a pot of oil (filled no more than half-way) to deep-frying temperature.
13. Take the koeksisters and using a slotted spoon, carefully place them in the hot oil.
14. Deep-fry until golden then remove from the oil and drain on kitchen towel.
15. While the koeksisters are still hot, dip them into the ice cold syrup and place on a wire rack to cool completely.
For the Syrup
1. Make this syrup the day before and keep it in the fridge overnight. The colder it is, the better!
2. Combine all the syrup ingredients in a pot and bring to the boil.
3. Reduce the heat and simmer gently for 10 minutes.
4. Allow to cool and then pour the syrup into a glass bowl, cover and pop in the fridge to chill.
