Recipe of the Month 4

Time for a good winter warmer!

Spicy Fish Bake


8x 200g of cod or haddock (or mix)
Pinch of pepper and himalayan rock salt
A desert spoon of coconut oil
10 pitted black olives
2 anchovy fillets chopped
2 tbsp of lemon zext
1/2 spoon of hot paprika
2 cups of vine tomatoes
1 cup of red onions
2 cloves of garlic
1/2 cup of fresh basil roughly chopped
2 tbsp of fresh origanum
1 tssp of fresh thyme


- Preheat oven to 200 degrees C

- Season both sides o fish with salt pepper and coconut oil (soft)

- Sautee onions in coco nut oil or butter

- Add chopped garlic

- Add all the remaining ingredients (baring the cod/haddock) and simmer for 5 minutes on a low heat

- Place the pieces of fish in a lasagne oven dish and cover with the sauce

- Bake for 40 mminutes

- Remove from heat and allow to stand for 5 minutes

- Garnish with fresh herbs for decoration
